摘 要:目的:建立固相萃取-气相色谱法测定焦糖色素中4-甲基咪唑的方法。方法:样品经Chem Elut硅藻土柱净化富集、二氯甲烷洗脱浓缩,采用DB-1701气相色谱柱,氢火焰离子化检测器测定。结果:4-甲基咪唑在100~500μg·mL^(-1)具有良好的线性关系,检出限为0.002 mg·mL^(-1),平均加标回收率在100.2%~100.7%,相对标准偏差为0.2%~0.5%。结论:该方法重现性好,操作简单快速,定量准确,能够满足分析检测的需求,适合在焦糖色素质量控制中使用。Objective:To establish a method for the determination of 4-methylimidazole in caramel pigments by solid phase extraction and gas chromatography.Method:The samples were purified and concentrated by Chem Elut diatomite column,eluted and concentrated by dichloromethane,and determined by DB-1701 gas chromatographic column and hydrogen flame ionization detector.Result:4-methylimidazole had a good linear relationship in the range of 100~500μg·mL^(-1),the detection limit was 0.002 mg·mL^(-1),the average recovery rate was 100.2%~100.7%,and the relative standard deviation was 0.2%~0.5%.Conclusion:The method has good reproducibility,simple and rapid operation,accurate quantification,can meet the needs of analysis and detection,and is suitable for use in caramel color quality control.
