摘 要:为提高食品微生物检测的准确性与可靠性,保障食品安全,本文探讨了聚合酶链式反应(Polymerase Chain Reaction,PCR)在食品微生物检测中的应用,重点分析了其在食源性致病菌、食品腐败微生物、加工污染微生物以及微生物毒素检测中的应用优势。分析认为,PCR技术具有高灵敏度、高特异性和快速检测的显著优势,但其应用效果受样品预处理、检测环境稳定性、人员操作水平以及标准化流程等多种因素的影响。基于此,应当加强检测样品的规范采集与制备,保障检测环境的稳定性,提高检测人员的专业素养,制定并严格执行标准化操作流程,以推动PCR技术在食品微生物检测中的广泛应用,从而保障食品安全。In order to improve the accuracy and reliability of food microbial testing and ensure food safety,this article discusses the application of polymerase chain reaction(PCR)technology in food microbial testing,focuses on the advantages of its application in the detection of food-borne pathogenic bacteria,food spoilage microorganisms,processing contaminating microorganisms and microorganisms.According to the analysis,PCR technology has the significant advantages of high sensitivity,high specificity and rapid detection,but its application effect is affected by various factors such as sample pretreatment,detection environment stability,personnel operation level and standardized process.Based on this,we should strengthen the standardized collection and preparation of testing samples,ensure the stability of the testing environment,improve the professionalism of testing personnel,and formulate and strictly implement standardized operating procedures to promote the widespread application of PCR technology in food microbial testing,thereby ensuring food safety.
