摘　　要：以牛至精油、植物糖原和海藻酸钠为原料制备可食性复合膜,改善单一薄膜的性能,并且,研究其对鲜切苹果的保鲜效果。通过比较不同膜的厚度、色差、水溶性、溶胀度等性能,探究最佳制备复合膜溶液的配方。结果表明,复合膜溶液的最佳配方为1.0 g/L牛至精油、1.0 g/L植物糖原、10 g/L海藻酸钠、1%甘油(v/v)、1%吐温80(v/v)及0.1 g/L氯化钙。同时,该膜溶液制备的复合膜能有效地保持鲜切苹果的品质并延长其货架期,为食用膜的开发提供了新的方法。Oregano essential oil,plant glycogen and sodium alginate were used as raw materials to prepare edible composite film,in order to improve the performance of single film,and to study its effect on fresh-cut apples.By comparing the properties of different films,such as thickness,color difference,water solubility,swelling degree,et al.The optimum preparation formula of composite film solution was explored.The results showed that the best formula of the composite membrane solution was oregano essential oil(1.0 g/L),plant glycogen(1.0 g/L),sodium alginate(10 g/L),glycerin(1%,v/v),Tween 80(1%,v/v)and calcium chloride(0.1 g/L).At the same time,the composite film prepared by the film solution could effectively maintain the quality of fresh cut apple and extend its shelf life,which provided a new method for the development of edible film.
