摘  要:“食品卫生学”是食品专业一门重要的核心课程。基于OBE(outcome-based education)理念,在传统教学方法的基础上,对“食品卫生学”教学模式进行构建,制定“食品卫生学”合理具体、可达可测的课程目标。以能力培养为目标,“以学生为中心”实施“食品卫生学”课程教学方案等多途径提高学生的学习自主性和实践能力,同时采用生生互评、小组互评、教师评价等多元化的评价方式,注重学生的过程性考核及课程评价持续改进机制,形成“食品卫生学”课程质量保障体系。该教学模式的应用对该课程目标的实现具有重要意义,为食品专业其他相关课程的教学改革提供一定借鉴。“Food Hygiene”is an important core course of food major.Based on the concept of OBE(outcome-based education),on the basis of traditional teaching methods,the teaching mode of“Food Hygiene”is constructed,and a reasonable,specific,achievable and measurable curriculum objectives of“Food Hygiene”are formulated.Aiming at the cultivation of abilities,the teaching plan of“Food Hygiene”course is implemented with“student-centered”,and other ways are adopted to improve students’learning autonomy and practical ability.At the same time,a diversified evaluation method,such as mutual evaluation between students,mutual evaluation between groups,teacher evaluation and so on,is adopted to pay attention to the process assessment of students,and the continuous improvement mechanism of curriculum evaluation,so as to form a quality assurance system of“Food Hygiene”course.The application of this teaching mode is of great significance to the realization of the course objectives,and provides a certain reference for the teaching reform of other related courses of food major.
