摘 要:目的测定福建省24种常见蔬菜、谷类食品中α-和β-胡萝卜素,分析含量特征和摄入量,为指导合理膳食提供依据。方法用高效液相色谱法测定样品中α-和β-胡萝卜素含量并分析分布特征,初步评估居民平均胡萝卜素摄入量。结果蔬菜、谷物中α-胡萝卜素的含量均小于β-胡萝卜素;蔬菜中α-和β-胡萝卜素均有检出,而谷物中仅检出β-胡萝卜素;各类蔬菜胡萝卜素含量也有较大差异,总体上是叶类>鲜豆类>瓜果类;谷物中的胡萝卜素含量总体上较低;结合福建省蔬菜、谷物的消费量,初步评估福建省居民的平均摄入量:蔬菜中α-胡萝卜素为55.6μg/d、蔬菜中β-胡萝卜素为336.8μg/d、谷类中的β-胡萝卜素仅17.1μg/d。结论福建省24种常见蔬菜、谷类食品α-和β-胡萝卜素含量测定、分布特征和摄入量评估,对指导合理膳食有重要意义。Objective To determine content ofα-carotene andβ-carotene in 24 common vegetables and cereals,as well as to assess their dietary intake among residents of Fujian Province,in order to provide a basis for dietary recommendation.Methods High performance liquid chromatography(HPLC)was used to determine theα-carotene andβ-carotene content of the samples and analyze their distribution characteristics.Average carotene intake of the population was preliminarily assessed.Results Vegetables and cereals contained lessα-carotene thanβ-carotene.Bothα-carotene andβ-carotene were detected in vegetables,while onlyβ-carotene was detected in cereals.The carotene content of various types of vegetables and fruits varied considerably,with leafy vegetables containing the highest carotene,followed by fresh legumes,melons and fruits.Carotene were generally low in cereals.Based on the average consumption level of vegetables and cereals in Fujian Province,a preliminary assessment of the average intake of carotene was made for residents.The average intake ofα-carotene from vegetables was 55.6μg/d andβ-carotene was 336.8μg/d.The average intake ofβ-carotene from cereals was only 17.1μg/d.Conclusion Determination ofα-carotene andβ-carotene content and their distribution characterization in 24 common vegetables and cereals,as well as their average intake in Fujian Province are of great significance in guiding rational diet.
