摘 要:虫茶是我国少数民族特有的林业资源昆虫产品,生产和饮用历史悠久。虫茶中富含蛋白质、脂肪酸、矿物质及微量元素,具有清热解毒、抗菌消炎、抗氧化、抗癌、预防高血压和心脑血管疾病等功效,具有重要的营养价值和药用价值,其食品和药品应用开发前景广阔。本文综述了虫茶的营养成分以及生物功能特性,并对虫茶的生物安全性进行评价,进一步对虫茶的未来研究方向及开发应用前景予以展望。Insect tea was an insect product of forestry resource unique to ethnic minorities in China with a long history of production and drinking.Insect tea contained protein,fatty acids,minerals,and trace elements.It had the effects of clearing heat and detoxifying,antibacterial and anti-inflammatory,antioxidant,anti-cancer,preventing hypertension and cardiovascular and cerebrovascular diseases,etc.It had important nutritional and medicinal values and had broad prospects for the application and development in the fields of food and medicine.This paper reviewed the nutritional components and biological functional characteristics of insect tea,evaluated the biosafety,and further looked forward to its future research direction and potential applications.
