摘 要:该文建立了一种超高效液相色谱-串联质谱法同时检测葡萄酒中的氨基甲酸乙酯、赭曲霉毒素A及9种生物胺。实验对质谱条件和超高效液相色谱条件进行优化,并进行方法学验证。结果表明:11种化合物在各自浓度范围内呈良好线性关系(r≥0.995 0),检出限在0.3~5.0μg/kg,定量限在0.9~15.0μg/kg,方法回收率在62.4%~117.5%,精密度均小于10.0%。该方法简便、灵敏,可用于葡萄酒中11种潜在风险化合物的定性筛查与含量测定。An ultra performance liquid chromatography-tandem mass spectrometry(UPLC-MS/MS)method was developed for the simultaneous determination of ethyl carbamate,ochratoxin A and 9 biogenic amines in wine.The mass spectrometry and ultra performance liquid chromatography conditions were optimised and methodologically validated.The results showed that the 11 compounds showed good linearity in their respective concentration ranges(r≥0.9950),the limits of detection(LOD)were in the range of 0.3~5.0μg/kg,the limits of quantification(LOQ)were in the range of 0.9~15.0μg/kg,and the method recovery rates were in the range of 62.4%~117.5%,and all precision was<10.0%.The method is simple,sensitive and can be used for qualitative screening and quantitative determination of 11 potentially hazardous compounds in wine.
