摘  要:为提高核桃雄花的利用率,并得到具有良好功能性的果胶,此研究以核桃雄花为原料,通过响应面分析优化超声辅助核桃雄花果胶的最佳提取工艺条件。结果表明,各因素对果胶提取率的影响依次为提取时间>提取温度>超声功率,最佳提取工艺条件为提取温度66℃,提取时间62 min,超声功率200 W。在此条件下,果胶得率可达18.13%。试验结果可为核桃雄花的有效利用提供试验依据。To improve the utilization rate of walnut male flowers and to obtain pectin with good functional properties,this study used walnut male flowers as raw materials and optimized the extraction process of pectin from walnut male flowers assisted by ultrasound through response surface methodology.The results showed that the effects of various factors on pectin extraction rate were in the following order:extraction time>extraction temperature>ultrasonic power.The optimal extraction conditions were extraction temperature of 66°C,extraction time of 62 min,and ultrasonic power of 200 W.Under these conditions,the pectin yield reached 18.13%.The experimental results can provide a theoretical basis for the effective utilization of walnut male flowers.
