摘 要:“山西特色酿造食品”是一门研究酿造酒与酿造醋生产工艺、品质控制的专业方向课,蕴含着极为丰富的科学精神与人文精神,是开展大学生思政引领与教育的良好载体,在课程知识传授中融入价值塑造,能够积极推动高校课程思政和专业思政的一体化建设。基于“山西特色酿造食品”课程教学要求,主要从课程目标的明确、思政元素挖掘、教学方式的改进、实践育人的协同渗透、评价反馈方式、提升教师思政能力等方面对该课程思政开展具体探索,以期为食品专业课程思政改革提供实践路径,进一步发挥专业课的育人功能。“Shanxi Characteristic Brewed Food”is a professional course that studies the production technology and quality control of brewed wine and brewed vinegar,containing extremely rich scientific spirit and humanistic spirit,which is a good carrier for ideological and political guidance and education for college students.Integrating value shaping into the teaching of knowledge can actively promote the integrated construction of ideological and political courses and professional ideological and political courses in colleges.Based on the teaching design of the“Shanxi Characteristic Brewed Food”course,the course is mainly studied from the aspects of clarifying course goals,mining ideological and political elements,improving teaching methods,collaborative penetrating of practical education,evaluating feedback methods,and improving ideological and political abilities of teachers.Which finally provides a practical path for the ideological and political reform of food professional courses and further exerts the educational function of professional courses.
