摘 要:食品微生物检测是保障食品安全的重要环节,传统检测方法存在检测周期长、灵敏度低等问题,难以满足现代食品工业的需求。本文综述了食品质量控制中新兴的微生物检测技术,包括分子生物学检测技术、免疫学检测技术和生物传感器技术。通过分析各种技术的检测原理、特点及应用要点,探讨这些新型技术在提高检测效率、灵敏度和特异性等方面的优势,以期为食品安全监管提供参考和借鉴。Microbial detection in food is an important part of ensuring food safety.Traditional detection methods have problems such as long detection cycles and low sensitivity,which are difficult to meet the needs of modern food industry.This article reviews emerging microbial detection technologies in food quality control,including molecular biology detection technology,immunological detection technology and biosensor technology.By analyzing the detection principles,characteristics and application points of various technologies,the advantages of these new technologies in improving detection efficiency,sensitivity and specificity were discussed,in order to provide reference for food safety supervision.
