摘  要:食品微生物学是食品学科的专业基础课,具有课程覆盖面广、知识点多、内容抽象,难教难学等特点,课程中许多知识点与生物化学、分子生物学等其他学科存在着紧密联系,且食品微生物学课程各章节内容间相对独立。论述食品微生物学课程目前面临的主要问题,包括课程思政教学效果不理想、课程设置与产教融合不紧密、教学模式传统难以达成教学目标、课程质量考核难以评价学生综合能力等,并提出相应的措施和解决方案,着重阐述创新教学方法以及评价考核机制,以期培养学生的学习兴趣,促使学生提高主动学习能力,拓展学生的眼界和理论知识,提高学生解决实践过程中出现复杂问题的能力,培养出适应产业与经济发展需求的创新型食品人才。Food microbiology is a professional basic course in the field of food science, which has the characteristics of widecoverage of the course, numerous knowledge points, abstract content, and difficulty in teaching and learning. Many knowledgepoints in the course are closely related to other disciplines such as Biochemistry and Molecular Biology, and the contents ofeach chapter in the food microbiology course are relatively independent. This paper discusses the main problems currentlyfaced in the food microbiology course, including the unsatisfactory teaching effect of ideological and political education inthe course, the loose connection between the course setting and the integration of production and education, the traditionalteaching mode being difficult to achieve the teaching goals, and the dificulty in evaluating students' comprehensive abilitiesthrough the course quality assessment, etc. Corresponding measures and solutions are proposed, with a focus on innovativeteaching methods and evaluation mechanisms, aiming to cultivate students' interest in learning, promote their active learningability, expand their horizons and theoretical knowledge, improve their ability to solve complex problems in the practicalprocess, and cultivate innovative food talents that meet the needs of industry and economic development.
