摘 要:沅陵碣滩茶素以“形美、色绿、香高、味醇”而著称。为探明沅陵碣滩茶色、香、味、形的品质特色与生化特征,分别对4个等级(银针、一号、银毫、翠峰)共27个代表性茶样进行感官品质与生化成分分析。结果表明,沅陵碣滩茶整体上表现为外形条索紧秀、绿润,香气清香(嫩香)高长,汤色黄绿明亮,滋味鲜醇,叶底嫩绿明亮的品质特色。同时,色泽品质方面具高叶绿素含量的品质特征。香气品质方面以烯烃类化合物(如去氢白菖烯、β-杜松烯和月桂烯)、醇类化合物(如芳樟醇、苯乙醇和香叶醇)为主要香气物质;滋味品质上具有高水浸出物、高儿茶素、高氨基酸、高可溶性糖、高琥珀酸、高柠檬酸以及低酚氨比、低咖啡碱的品质特征,并拥有丰富的茶多酚和茶氨酸。由此提示,沅陵碣滩茶是一种在品饮和健康属性方面具有高品质特征的名优绿茶。Yuanling Jietan tea is renowned for its characteristics of"beautiful shape,green color,high aroma,and mellow taste."In order to comprehensively explore the quality features of color,aroma,taste,and shape,as well as their biochemical characteristics,sensory quality and biochemical components analysis were conducted on 27 representative tea samples from four grades(Yinzhen,No.1,Yinhao,and Cuifeng)of Yuanling Jietan tea.The results indicate that Yuanling Jietan tea,overall,exhibits quality features of tight and neat appearance,lustrous green color,clear and long-lasting aroma,bright yellow-green liquor color,fresh and mellow taste,and tender,bright green infused leaf.At the same time,it has the quality characteristics of high chlorophyll content in terms of color quality.In terms of aroma quality,it is primarily composed of olefins(such as cis-calamenene,β-cadinene,and myrcene),and alcohols(such as linalool,phenylethanol,and geraniol)as the main aroma compounds;In terms of taste quality,it is characterized by high water extract,high catechins,high amino acids,high soluble sugars,high succinic acid,high citric acid,as well as low phenol ammonia ratio and low caffeine,and rich in tea polyphenols and theanine.This indicates that Yuanling Jietan tea is a superior green tea with highquality characteristics in terms of taste and health properties.
