摘 要:为探明普洱茶对3种肠道致病菌的抑制作用,分别以普洱茶生茶和熟茶为试验材料,采用倍比稀释法制作7个比例的茶水浸液,以肠炎沙门菌ATCC 14028(Salmonella enteritidis)、福氏志贺菌CMCC(B)51572(Shigella flexneri)、大肠杆菌CMCC(B)44102(Escherichia coli)3种肠道致病菌为供试菌株,采用K-B法进行抑菌圈试验,分别探讨培养24 h和48 h条件下7个茶水浸液普洱茶生茶和熟茶对3种肠道致病菌的抑制作用。结果表明,普洱茶水浸液较高浓度时对3种供试肠道致病菌具有较强抑制作用,但培养24 h条件下除普洱茶生茶水浸液对大肠杆菌抑制作用大于普洱茶熟茶外,普洱茶生茶与普洱茶熟茶水浸液对3种供试肠道致病菌的抑制作用均无明显差异(p<0.05);普洱茶生茶水浸液对大肠杆菌的抑制作用大于福氏志贺菌大于肠炎沙门氏菌;普洱茶熟茶对肠炎沙门氏菌、福氏志贺菌的抑制作用大于对大肠杆菌的抑制作用。本试验结果可为普洱茶及肠胃保健品及肠道致病菌感染性疾病预防药物的开发等提供理论依据。To investigate the inhibitory effects of Pu-erh tea on three intestinal pathogenic bacteria,raw and ripe Pu-erh tea were used as experimental materials,and seven ratios of tea water extract were prepared using the twofold dilution ratio method.Three types of intestinal pathogenic bacteria,including Salmonella enteritidis ATCC 14028,Shigella flexneri CMCC(B)51572,and Escherichia coli CMCC(B)44102,were selected as test strains.The inhibition zone experiment was carried out using the K-B method to study the inhibitory effects of the seven ratios of tea water extract of raw and ripe Pu-erh tea under 24 and 48 hour cultivation conditions on the three intestinal pathogenic bacteria.The results showed that high concentrations of Pu-erh tea water extract had a significant inhibitory effect on the three tested intestinal pathogenic bacteria.However,except for the inhibitory effect of raw Pu-erh tea water extract on E.coli being higher than that of ripe Pu-erh tea water extract after 24 hours of cultivation,there was no significant difference in the inhibitory effects of raw and ripe Pu-erh tea water extract on the three tested intestinal pathogenic bacteria(P<0.05).The inhibitory effect of raw Pu-erh tea water extract on E.coli was higher than that on S.flexneri and S.enteritidis.Ripe Pu-erh tea had a stronger inhibitory effect on S.enteritidis and S.flexneri than on E.coli.The results of this experiment can provide a theoretical basis for the development of Pu-erh tea as a gastrointestinal health products and prevention medicine for infectious diseases caused by intestinal pathogenic bacteria.
