中餐之“中”

摘  要:中餐作为我国代表性非物质文化遗产,饮誉世界。中餐并非简单的餐饮技艺,它是一个完整体系,包含中华文明的核心价值天时、地利、人和之“致中和”;中餐拥有深邃的智慧哲理;中国作为传统的礼仪之邦,“夫礼之初,始诸饮食”;中餐的菜系体现了“中华民族多元一体”的地方、族群特色;中餐的烹饪技艺繁复多样,传承有方;中餐作为饮食线路遗产,伴随中国人走遍世界,形成了跨越空间的态势,“中餐道理”传布天下。As a representative intangible cultural heritage of China,Chinese cuisine is world famous.Chinese cuisine is not a simple catering skill,it is a complete system that contains the meaning of“harmony”as the core values of Chinese civilization,which is concluded from“favourable timing,geographical and human conditions”;Chinese cuisine has profound philosophical wisdom;as a traditional country with etiquette,ritual behavior is generated from people’s eating activities;the Chinese cuisine embodies the local and ethnic characteristics of“the unity of pluralistic society of the Chinese nation”.The culinary skills of Chinese cuisine are complicated and diverse,and the inheritance is good;as a dietetic route heritage,Chinese cuisine has accompanied Chinese people around the world,forming a trend across space,and the“truth of Chinese cuisine”has been spread throughout the world.
