摘 要:目的:随着经济不断发展,国民对营养健康需求的重视程度不断提高。为了将分餐制的实施流程按照国家标准GB/T39002—2020《餐饮分餐制服务指南》推行的“按位分餐”“公共餐具分餐”“自取分餐”三种分餐方式进行规范和区分,对执行分餐活动提供具体的理论指导和实践思路。方法:通过文献检索和收集整理我国相关法规和标准,对分餐制的历史演变、文化特性和推行挑战等方面进行分析与讨论。结果:分餐制具有预防传染性疾病、有助于食物合理搭配、促进营养均衡、节约食物等优点。但目前受文化、菜品等多种因素的影响,我国居民分餐意识仍待提高。结论:应通过国家层面管理进行标准制定和完善,餐饮企业推广提供实践思路,专业人员创新以满足分餐方式科学性和多样化等方面,合力提高我国居民的营养健康水平。【Objective】With the continuous development of economy,people pay more attention to nutrition and health needs.In order to standardize and distinguish the implementation process of the meal separation system according to the national standard GB/T39002—2020"Food and Beverage Meal separation System Service Guide",the three meal separation methods of"by position","public tableware"and"self-picking"are implemented,and provide specific theoretical guidance and implementation ideas for the implementation of meal separation activities.【Method】Through literature retrieval and collection of relevant laws and standards in China,the historical evolution,cultural characteristics and implementation challenges of the meal system were analyzed and discussed.【Result】The separate meal system has the advantages of preventing infectious diseases,contributing to reasonable food collocation,promoting balanced nutrition and saving food.However,due to the influence of many factors such as culture and dishes,Chinese residents'awareness of meal separation still needs to be improved.【Conclusion】It is necessary to formulate and improve the standards through the national level management,provide practical ideas for the promotion of catering enterprises,and innovate professional personnel to meet the scientific and diversified ways of planning,so as to jointly improve the nutritional health level of Chinese residents.
