摘　　要：随着现代食品工业快速发展和人们健康饮食意识的不断增强,开发兼具健康、营养和感官品质的食品已成为食品加工领域的迫切任务。在清洁标签食品的大形势下,介绍了清洁标签的概念和原理,并以此为基础综述了天然有机物和新型加工技术在清洁标签食品制备中的应用,为促进清洁标签在食品行业中的生产和推广提供参考依据。With the rapid development of modern food industry and people pay more attention to healthy diet.Hence,there is an urgent need for development of the food possessed health,nutrition and sensory quality.Under the new circumstances of clean label food,the definition and theory of clean label was described in the paper,and the application of natural organic compound and new food processing technology in clean label food were summarized,either.The review provided references for the production and promotion of clean label food in food industry.
