摘 要:采用低场核磁共振分析技术预测喷雾加湿调质过程糙米中γ-氨基丁酸含量变化。以氨基酸分析仪测定的结果作为参考值,利用低场核磁共振仪获取糙米样品的横向弛豫数据,建立并验证了GABA与LF-NMR检测结果的相关性模型。BP-ANN低场核磁共振预测模型最优。校正集相关系数(r_c)高达0.9719,而校正均方根误差(RMSEC)为0.3435 mg/100 g。对于预测集,其相关系数(r_p)为0.9523,预测均方根误差(RMSEP)为0.5361 mg/100 g。结果显示,预测值与实际值之间存在高度的相关性。因此,这些结果表明,低场核磁共振可以快速、无损地检测加湿调质过程糙米中γ-氨基丁酸含量。This paper employs low-field nuclear magnetic resonance(LF-NMR)analysis technology to predict changes inγ-aminobutyric acid(GABA)content in brown rice during the spray humidification and conditioning process.Using results obtained from an amino acid analyzer as reference values,LF-NMR was utilized to acquire transverse relaxation data from brown rice samples.A correlation model between GABA and LF-NMR detection results was established and validated.The BP-ANN(Back Propagation Artificial Neural Network)LF-NMR prediction model performed optimally.The correlation coefficient for the calibration set(rc)was 0.9719,with a root mean square error of calibration(RMSEC)of 0.3435 mg/100 g.The correlation coefficient for the prediction set(rp)was 0.9523,and the root mean square error of prediction(RMSEP)was 0.5361 mg/100 g.The results indicate a high correlation between predicted and actual values.Therefore,these findings suggest that LF-NMR can be used for rapid and non-destructive detection of GABA content in brown rice during the humidification and conditioning process.
