摘 要:以种植于同一区域的54个柿大茶品系为研究对象,分析其农艺性状(物候期、发芽密度和百芽质量),按同一加工工艺加工成太平猴魁后,分析其感官品质、主要理化成分含量,结合主成分分析评价供试柿大茶品系的太平猴魁适制性。结果表明,不同柿大茶品系加工的太平猴魁,其儿茶素含量的变异系数最大(43.00%),其次是没食子酸(25.53%)、表儿茶素没食子酸酯(24.99%)和茶氨酸含量(24.98%)。主成分分析结果表明,前5个主成分贡献率达68.53%,第1主成分贡献率为23.37%,主要指向茶多酚、酚氨比、表没食子儿茶素和表儿茶素。基于前5个主成分构建评价模型,得到排名前10的柿大茶品系。根据54个柿大茶品系农艺性状观测结果,筛选出了3个同时具有较早生、发芽密度较高、百芽质量较高特征的品系:SDC29、SDC32和SDC40,同时结合主成分分析和感官审评结果筛选出3个综合评价值与感官审评各项得分均较高的品系:SDC8、SDC29和SDC27。This study took 54‘Shidacha’strains planted in the same area as the research subjects,analyzed their agronomic traits(phenological period,germination density and weight of 100 buds),processed them into‘Taiping Houkui’tea by the same processing technology,and analyzed their sensory qualities and main physical and chemical qualities.Combined with principal component analysis,the suitabilities of the tested‘Shidacha’strains for‘Taiping Houkui’tea production was evaluated.The results show that the coefficient of variation of catechin(C)content among different‘Shidacha’strains of‘Taiping Houkui’tea was the largest(43.00%),followed by GA(25.53%),ECG(24.99%)and theanine content(24.98%).The results of principal component analysis indicate that the contribution rate of the first five principal components reached 68.53%,with the contribution rate of the first principal component being 23.37%,mainly including tea polyphenols,the ratio of polyphenols to amino acids,EGC and EC.Based on an evaluation model of the first five principal components,the top 10‘Shidacha’strains were obtained.Based on the observation results of agronomic traits of 54‘Shidacha’strains,three strains(SDC29,SDC32 and SDC40)with the characteristics of early growth,high germination density and high weight of 100 buds were selected.At the same time,combined with principal component analysis and sensory evaluation results,three strains(SDC8,SDC29 and SDC27)with high comprehensive evaluation values and high scores in sensory evaluation were selected.
