摘　　要：本文详细介绍了用ELISA法测定肉制品中大豆蛋白含量的步骤。并对干扰试验和回收率试验的结果进行了讨论。通过对市售14种火腿肠总蛋白含量与大豆蛋白含量的测定,初步了解此类产品植物蛋白的添加情况以及肉蛋白占有率。The article introduced the steps of mensuration of th e content of soybean protein in the meat products by ways of ELISA.And discuss ed the disturbing experiment and result of the reclaim ex-periment.According to thedetermination of the protein content and soybean protein of the14ham in the market,we can get the additive situation of the plant protein and the ap propriation of the meat protein.
