摘　　要：阐述了创新菜点的市场寿命分级,分析了一些创新菜点短命的原因,指出只有“实用”,创新菜点才有生命。“实用”的创新菜点必须具备原料方便易得、制作较为容易、感官形状良好、注重营养保健等几个特征。This article expounds the life - span gradations of cooking new dishes and then explains some reasons for some dishes short lives. It is pointed out that only by 'being practicaT'can the new dishes exist for a longer time, which must have the following characteristics of raw material's easy obtaing and processing,good and pleasant shape and emphasizing on the nutrition and health protection etc.
