摘  要:该文研究了纤维素酶水解和酸洗法相结合,从大米糖化渣中提取食用蛋白质的新工艺。纤维素酶水解最佳条件为温度50℃,pH4.8~5.0,纤维素酶用量20u/g^40u/g米渣,酶解时间30min^60min;酸洗法以二级酸洗提取效果较好,提取最佳条件为温度30℃,时间60min,料液比1:6;用纤维素酶水解和二级酸洗两步法提取,得到产品蛋白含量最高达86.8%。The article introduces the new technology that distilling the edibl e protein from the rice dregs combine with both of methods, cellulose hydrolysis and acid-washing disposal . The optimal temperature of cellulase hydrolysis is 50℃, and pH is 4.8~5.0, in addition, the dosage of cellulose is about 20u/g^40u/g, and the hydrolysable time of rice dregs is 30min^60min. According as th e research, the distilling combined with secondary acid-washing and cellulase hydrolysis can be proved ex cel to the acid-washing disposal and work perfectly at the temperature 30℃, the time 60min, with the mate rial's proportion 1:6. The final production of protein's content can achieve mostly 86.8% making use of this ki nd of technology that combined with cellulase hydrolysis and secondary acid-washing disposal.
