摘  要:菊花啤酒是近年出现的一个啤酒新品种。菊花性苦微寒,具有清热解毒、凉肝明目的功能。由于菊花有效成分的溶入,使成品啤酒具有菊花拥有营养、保健功能。采用70%麦芽和30%大米的原料配比和煮-浸法二段式糖化工艺制备麦芽汁。添加适量酒花和菊花,经发酵所酿制的成品啤酒色泽浅,口味纯正,淡爽,泡沫洁白细腻、持久挂杯,菊花香气明显,而且,酒精度低,热量低,受到了广大消费者的欢迎。The chrysanthemum beer is a new beer product that appeared in recent years. since chrysanthemum has medical function,chrysanthemum beer has more health protection effects than ordinary beer has. The wort of chrysanthemum beer is manufactured by using the method of boiling-soaking and the two-stage mashing procedure with 70% malt and 30% rice. A proper amount of hop and chrysanthemum is added in the boiling pan. The brewed beer obtained by fermentation is light in color, pure in taste, durable and smooth in foam, and clear in aroma. Furthermore it contains low alcohol and is low in heat. Therefore chrysanthemum beer is popular among all consumers.
