摘　　要：酱油质量的好坏与原料的质量有密切关系 ,选择优质原料是酿造优质酱油的前提。本文从原料的采样。The quality of soy sauce is closely connected with the quality of raw materials. Good quality is the base of good soy sauce. In this paper, the methods of choosing good raw materials both in sampling and testing were discussed.
