摘  要:为适应“大健康”战略需求,食品学科亟需探寻当前培养模式下的学科建设和教学改革新路径,将“大健康”理念融入食品学科教学体系,并加以实践。从总体上进行优化设计,构建“大健康”理念的教育框架,学生将通过从大健康的角度深入探讨食物与人体健康以及食品安全之间的联系,获得食品学科的基本理论、知识和技能,并能够将这些理论知识应用到实际操作中。本文中我们以《食品营养学》为例具体叙述其改革需要。In order to meet the strategic needs of “big health”, the food discipline needs to explore a new path of discipline construction and teaching reform under the current training mode, and integrate the concept of “big health” into the food discipline teaching system and put it into practice. Through the overall optimization design and the construction of the educational framework of “big health” concept, students will gain the basic theories, knowledge and skills of food science through in-depth discussion of the connection between food and human health and food safety from the perspective of big health, and be able to apply these theoretical knowledge to practical operations. In this paper, we take “Food Nutrition” as an example to describe its reform needs.
