摘 要:为深入研究红曲菌代谢产物生成过程及其用途,采用柱层析法对红曲中的醇溶性黄色素组分进行分离和纯化,并用高效液相色谱对其纯度及光稳定性进行表征。研究结果表明,利用柱层析法可以分离和纯化醇溶性红曲提取物中的黄色素,其最大吸收峰为385nm。红曲黄色素对光较敏感,光照后由于其分解使分子结构发生变化,导致褪色,因此对红曲黄色素应避光保存。In order to investigate the formative process and applicational exploitation of Monascus metabolized products the fraction of alcohol soluble yellow pigment was separated and purified by column chromatography and its purity and light stability were characterized by the HPLC. Experimental results showed that the column chromatography was suitable to separate and purify the yellow pigment in the alcohol-soluble Monascus extractive the maximum absorption peak of the pigment was at 385 nm. The Monascus yellow pigment was sensitive of light the some changes of its molecular structure was found after the light illumination due to decomposition reaction it resulted in the decoloration of the pigment. Thus the Monascus yellow pigment would be stored in light proof condition.
