摘　　要：介绍了具有浓郁和风特色的海产鲣鱼(Katsuwonuspelamis)、鲭鱼(Pneumatophorusjaponicus)和鲔鱼(Euthynnusyaito)等制作成柴鱼(Firewoodfish)及其制品类的加工工艺,以及它们在调味品和食品工业中应用和开发现状等。作者还就柴鱼制品的发生和发展历程,并在综合利用原材料和未来的发展趋势作了阐述。The present minireview summarized the firewood fish (Katsuobushi) products manufactured by specialized process of the marine fish, as Katsuwonus pelamis、 Pneumatophorus japonicus and Euthynnus affnis yaito etc. The present situation which the fire-wood fish products apply and develop in seasoning and food industry is also indroduced.
