摘　　要：本文对茯砖茶发花过程中优势菌——冠突散囊菌(Eurotiumcristatum)的特征、生长条件、毒性、营养保健作用及发花过程中茯砖茶主要成分变化的研究进展进行了综述。In this paper, the characteristics, living conditions, toxicity and nutrition of dominant fungi——Eurotium cristatum during the fungus process are introduced. The study of changing of main ingredient during the fungus process is also summarized.
