金色补血草花中黄酮类化合物抗氧化活性研究

摘　　要：研究了金色补血草花中黄酮类化合物在大豆油中的抗氧化活性。结果表明:金色补血草花中黄酮对大豆油具有明显的抗氧化作用,且具有剂量效应关系,温度对黄酮类化合物在大豆油中抗氧化性能有一定影响,维生素C、柠檬酸、酒石酸对金色补血草花中黄酮类化合物的抗氧化性能均有协同增效作用。The antioxidation activity of Limonium aureum flower＇s flavioiods in the soybean oil was studied. The result showed that the antioxidation activity was very obvious and was enhanced with the increasing amount of Limonium aureum flower＇s flavioiods. Temperature has influence to the falconoid compound in soybean oil. Limonium aureum flower＇s falconoids with vitamin C or with citric acid or with tartaric acid exhibited remarkable antioxidation activity and synergistic effect in soybean oil.
