摘  要:介绍了与美国农业部东部研究中心合作开发的病原菌预报模型库(PMP)中文系统软件及其在食品安全管理中的应用领域,探讨了PMP中的金黄色葡萄球菌有氧生长模型在控制出口冻鳕鱼片加工过程中金黄色葡萄球菌增殖的应用实践。PMP预报模型库可以作为食源性病原菌风险评估和危害分析的数字化研究的辅助工具。The Chinese version of Pathogen Modeling Program (PMP) developed by cooperating with Eastern Regional Research Center, Agricultural Research Service, USDA, which application field in food safety management were mainly introduced. The growth model of Staphylococcus aureus in PMP which was applied practically for controlling the growth of Staphylococcus aureus in the manufacturing process of exported cod fillet was investigated. Predictive model bases of PMP were regarded as a assistant tool for risk assessments of food-born pathogen and digitized researches of hazard analysis.
