摘 要:该文介绍了不锈钢全能型酱油发酵罐的构造、操作及其特点。该罐一罐多用,既可用于酱油发酵,也可用于贮油、沉降或作其它用途。Traditionally, soy sauce fermentation equipment was a concrete fermentation pool which was heated partly by underground hot water. In this study, the construction, manipulation and characteristic of stainless steel equipment for soy sauce fermentation were introduced. This equipment can not only be used for soy sauce fermentation, but also for oil storage, sedimentation and other function.
