摘 要:探讨了无机陶瓷膜孔径、压力对生啤酒透液通量的影响,及对过滤除菌/除浊的效果。结果表明,膜孔径越大,在初始阶段啤酒的通量越大,随后稳定在0.8 ̄1.0kg/m2.h之间;孔径越大,压力对通量的影响越大,当压力超过一定值时,通量趋于稳定;膜过滤对生啤酒的理化指标有改善作用;3种膜均有显著的除菌/除浊效果,以0.5μm膜更适合生产实际,但孔径为0.1μm的膜除菌/除浊更为彻底。The effects of the pore size of inorganic ceramic membrane and the pressure on fluid flux of draft beer were investigated. Besides, the sterilization/turbidity removal effects by filtration were also studied. The results suggested that larger pore size caused highest beer flux in the initial phase and the flux then kept stable at 0.8-1.0 kg/m^2·h, the effects of pressure on beer flux became more evident under the condition of larger pore size and when the pressure exceeded certain value the flux tended to be stable, membrane filtration could improve physiochemical indexes of draft beer, and all three kinds of membrane had significant sterilization/turbidity removal effects (0.5 μm (pore size) membrane suitable for practical production and 0. 1μm (pore size) membrane had the best sterilization/turbidity removal effects).
