摘 要:针对7种大米,分别涂液体石蜡0.2%.索氏抽提法从整粒或粉碎大米中抽提粗脂肪,采用测定皂化值(方法Ⅰ)和不皂化物含量法(方法Ⅱ)确定大米表面的石蜡量.结果显示,除黑米外,方法Ⅰ和方法Ⅱ的回收率分别是93.1%~120%(整粒)、95.5%~109%(粉碎)和70.4%~122%(整粒)、70.9%~99.5%(粉碎).石蜡涂量在0.05%以上,方法Ⅰ是测定涂石蜡大米中石蜡含量的可靠方法.7 kinds of rice were coated with 0.2% paraffin liquid. The coarse fat of coated rice was extracted from the whole grain or the crushed rice with Soxhlet method. Its saponification value ( for method Ⅰ ) and unsaponifiable compound (for method Ⅱ ) were determined to confirm the liquid paraffin content on the surface of the rice grains. The recoveries obtained for method Ⅰ are 93.1% - 120% (using whole grain) and 95.5% - 109% (using crushed rice) ; the recoveries for method Ⅱ are 70.4% - 122% ( using whole grain) and 70.9% - 99.5% ( using crushed rice) except the black rice. The method is feasible for rice coated with paraffin more than 0.05%.
