摘  要:通过研究苹果渣多酚(APPs)的还原能力、羟基自由基(.OH)和1,1-二苯基-2-苦苯肼自由基(DPPH.)的清除能力、Fe2+诱导的脂质过氧化反应和β-胡萝卜素/亚油酸自氧化体系的抑制作用,对苹果渣多酚的体外抗氧化活性进行了评价,并与2,6-二叔丁基对甲酚(BHT)、叔丁基对苯二酚(TBHQ)进行了对比。结果表明:苹果渣中多酚还原能力高于BHT和TBHQ;对.OH和DPPH.的半数清除率(IC50)分别为522.4和15.8 mg.L-1;对Fe2+诱导的脂质过氧化反应的抑制作用小于BHT和TBHQ,IC50为126.4 mg.L-1;对β-胡萝卜素/亚油酸自氧化体系具有明显的抑制作用,IC50为25.2 mg.L-1。The antioxidant activity of the apple pomace polyphenols (APPs) was evaluated employing various established in vitro model systems, such as reducing power method, scavenging hydroxyl radical method, scavenging, 1, 1-diphenyl-2-picrylhydrazyl radical (DPPH·) method, peroxidation of polyunsaturated fatty acid from yelk lipoprotein induced by Fe^2+ method, and β-carotene/linoleic acid assay system. APPs showed better reducing power than butylated hydroxytoluene (BHT) and tert-Butyl hydroquinone (TBHQ). APPs showed more scavenging hydroxyl radical activity compared with BHT and TBHQ, the IC50 (inhibitory concentration 50%) being 522.4 mg·L^-1. APPs showed more effective scavenging DPPH·activity than BHT and TBHQ, the IC50 was 15.8 mg·L^-1 Furthermore, APPs showed powerful inhibitory effects on peroxidation of polyunsaturated fatty acid from yelk lipoprotein induced by Fe^2+ at all the tested concentrations, the IC50 being 126.4 mg·L^-1 Besides, APPs also showed very good inhibitory effects on β-carotene/linoleic acid assay system at all the tested concentration levels, the IC50 being 25.2 mg·L^-1.
