摘　　要：色素作为一种重要的食品添加剂，广泛应用于食品工业中，常用的色素包括人工色素和天然色素。本文介绍了三种饮料常用的天然色素，即叶绿素铜钠盐、β-胡萝卜素和天然苋菜红色素。详尽论述了这些天然色素的理化性质、生理功能和制备方法。As one kind of important food additive, colorants were used in food industry widely. Colorants used in beverage include artificial and natural pigment. Sodium copper chlorophyllin, β - carotene and nature amaranth red were introduced in this paper. Physical and chemical properties, physiological function and synthetic method of these colorants were fully discussed in this article.
