摘　　要：用大孔吸附树脂对桑椹原汁中的桑椹红色素进行了提取,用pH示差法对产品中的花青素进行测定,测得桑椹原汁中的花青素含量为0.02%。Mulberry red pigment is abstracted from mulberry juice by using macroporous resin and the anthocyanin content in the product is determined by pH-Differential spectrophotometry, we conclude that the anthocyanin content in the mulberry juice is 0.02%.
