摘 要:目的:了解北京地区居民膳食结构以及膳食营养状况,比较两种不同的膳食调查方法。方法:采用多级分层抽样的方法,从2004年9月至12月对顺义、昌平、朝阳、海淀、宣武以及东城6个区的12个社区,每个社区随机抽取15或16个家庭,共189个家庭503人参加了调查。分别采取称重记录法和重份样品的实际测定两种方法收集并分析数据。15名调查员分别在每个家庭连续6d(包括2个周末)对调查对象所摄取的食物一一称重纪录。同时,在每个社区15个家庭中随机抽取5个家庭,每个家庭各1名成员每天收集摄入的所有食物的重份样品,并对样品中的营养成分进行了测定。结果:了解了北京市居民膳食中各种食物的摄入量、主要营养素以及矿物质和微量元素的摄入状况,并与国内外膳食结构进行了比较;对两种不同调查方法的结果也进行了比较和评价。Objective: To better understand diet structure and nutritional status of residents living in Beijing and compare two different survey methods. Method: The multistage stratified sampling method was used. In total, the survey tracked 503 subjects from 189 families distributed in 12 communities of 6 districts in Beijing from September to Decem- ber in 2004. Two investigation methods were used: (1)weighing dietary record and (2)duplicated diet. During the 6-daysurvey including two weekends in each community 15 well-trained investigators were assigned to 15 different families, respectively, to weigh and record the varieties of all foods what the subjects ate up. Meanwhile, five members from five different families selected by random in each community had to collect, day by day, all duplicated foods and meals that he/she ate daily for 6 days. Contents of nutrients in duplicated diets were measured in Laboratory. Results: Intakes of different kinds of foods and main nutrients, minerals and micro elements in diet were presented. Difference in diet structure between the result from this survey and our national survey as well as western diet model were compared. Results: Two different methods were compared and estimated.
