摘  要:利用有机溶剂浸出法制备核桃毛油并经精炼得到精制核桃油,采用邻苯三酚自氧化反应测定核桃油的体外抗氧化活性。试验结果表明:核桃油对O2-的最大抑制率可达53.3%,花生油、大豆油分别为47.7%和22.8%,因此核桃油相比于其他两种植物油有较好的清除超氧自由基的能力。The walnut oil was produced by solvent extraction and refined by conventional refining technology,then the oxidation reaction of pyrograll vitro antioxidant activity of walnut oil was measured by the selfol. The results indicated that the maximum inhibition rate of walnut oil to 02 was 53.3% while that of peanut oil and soybean oil were 47.7% and 22.8% ,respectively. The ability of walnut oil to eliminate superoxide free radical is comparably better than that of the other plant oils.
