摘  要:对贻贝属的两种有经济价值的种类——紫贻贝和厚壳贻贝的蛋白质、氨基酸、不饱和脂肪酸、无机元素等营养成分进行了研究,通过分析比较可以确定厚壳贻贝的蛋白质、粗脂肪含量高于紫贻贝,必需氨基酸含量二者相差不十分明显,但厚壳贻贝的谷氨酸、甘氨酸、天冬氨酸含量明显高于紫贻贝,所以厚壳贻贝的海鲜味较浓.厚壳贻贝的二十二碳六烯酸含量高于紫贻贝.厚壳贻贝的多不饱和脂肪酸明显高于单不饱和脂肪酸,而紫贻贝的两种不饱和脂肪酸相差不大.除A1,Se外其它12种无机元素厚壳贻贝都明显高于紫购贝.可根据营养成分来选食贻贝.The nutritive contents in the two mussels Mytilus edulis and Mytilus corusous such as protein,amino acid,unsaturated fatty acid and inorganic elements are measured.The contents of protein and crud fat in Mytilus coruscus are higher than those in Mytilus edulis,while the contents of essential amino acids in them are not different considerably.The Mytilus corusous is a heavy seafood,as there existon much more glutamic acids,glycine and aspritic acids in it.The content of docosahexenoic acids(DHA)in M.coruscus is much more than that of M.edulis. Except Al,Se,the other 12 kinds of elements in M.edulis are higher than those in M.coruscus. The contents of polyunsaturated fatty acids (PUFA) much more than those of monounsaturated (MUFA)in M.coruscus .There is little difference in content between PUFA and MUFA in M.edulis. One can select mussel,to eat basing on its nutritive contents.
