摘　　要：麦麸是小麦加工主要副产物,其中含有丰富的碳水化合物、蛋白质、维生素、矿物质等,广泛用于饲料工业、食品工业、发酵工业。随着人们健康意识的不断提高,麦麸中的功能因子越来越受到人们的重视。麦麸的开发与利用,具有较高的社会效益和经济效益。Because of its rich nutrients such as carbohydrate, protein, vitamins and minerals etc , wheat bran is widely used in feed , food and fermentation industries. With the improvement of people＇s health consciousness , the functional compositions of what bran have drawn more and more attention of scientists , and its exploitation and utilization will surely provide relatively high social and economical benefits.
