摘  要:对酯化红曲在江淮流域多粮型大曲酒生产中的应用进行试验跟踪研究。结果表明,试验池与对照池相比,出酒率、优级率、优级酒数量、综合效益等经济指标提高幅度明显,且己酸乙酯、乳酸乙酯比例协调,达到了提高江淮流域多粮型大曲酒产、质量的目的。We have made series of experiments on the application of esterified red starter in multiple-grains type Daqu production in Jiang-Huai River drainage area. The results indicated that the experimental group was much better than the others in many indexs including the productivity, excellent ratio, excellent Daqu quantity and the comprehensive economic benefits etc. , besides, the proportion of caproic acid and ethyl lactate was more harmonious. The use of esterified red starter in Daqu production could improve the output and the quality of multiple-grains type Daqu in Jiang-Huai River drainage area.
