酪蛋白非磷肽的理化性质及ACE抑制活性

摘　　要：对酪蛋白非磷肽的溶解性、相对黏度、相对分子质量分布和氨基酸组成进行分析,并验证其具有较强的ACE抑制活性。经体外消化实验发现,CNPPs在消化道酶作用后,ACE抑制活性从52.05%提高到57.49%;肽谱分析显示出CNPPs中肽的种类和组成非常复杂。The solubility, relative viscosity, relative molecular weight and amino acid composition of casein nonphosphopeptides were analyzed. Meanwhile, intense ACE-inhibitory activity of CNPPs was found. The result of digestive experiment in vitro showed that the ACE-inhibitory activity of CNPPs was enhanced from 52.05% to 57.49%. Peptides map analyse revealed that the components of CNPPs were complicated.
