ANALYSIS ON DETECTION OF FOODBORNE PATHOGEN CONTAMINATION ON FOOD IN NANJING AREA FROM 2005-2007

摘  要:[目的]了解南京市食源性致病菌在食品中污染状况,提高食品卫生监测和危险性评估能力。[方法]2005~2007年采集8大类食品,共计373份样品按照GB/T4789-2003食品微生物检验标准进行沙门氏菌、金黄色葡萄球菌、副溶血性弧菌、单核细胞增生李斯特菌、大肠杆菌O157︰H7和空肠弯曲菌6种致病菌检测。菌株鉴定应用ATB细菌鉴定仪,肠毒素检测采用minVIDAS测试系统。[结果]2005年150份食品中沙门氏菌检出率为30.5%,单核细胞增生李斯特菌检出率0.7%,大肠杆菌O157︰H7检出率0.7%,空肠弯曲菌未检出;2006年140份食品中副溶血性弧菌检出率为25.0%,金黄色葡萄球菌检出率为20.0%,单核细胞增生李斯特菌检出率为18.3%,沙门氏菌检出率为4.3%,大肠杆菌O157︰H7和空肠弯曲菌未检出;2007年83份食品中金黄色葡萄球菌检出率为20.0%,单核细胞增生李斯特菌检出率17.9%,副溶血性弧菌检出率10.0%,沙门氏菌检出率3.6%,大肠杆菌O157︰H7、空肠弯曲菌未检出。[结论]2005~2007年373份食品中的食源性致病菌为金黄色葡萄球菌,单核细胞增生李斯特菌,副溶血性弧菌,沙门氏菌,说明这4种致病菌可能是近年南京市食源性疾病发生的潜在危险因素,尤其是单核细胞增生李斯特菌的高检出率,提示我们必须高度重视。[Objective] To analyze condition about foodborne pathogen contamination in food in Nanjing, for the sake of improving inspection and evaluation capability on food hygiene. [ Methods] From 2005 to 2007, 343 samples of eight kinds of food were collected, according to criteria of GB/T4789 - 2003.The samples were examined for pathogen microorganisms of Salmonellae, Staphylococcus aureus, Vibrio Parahemolyticus, Listeria Monocytogenes (LM), Escherichia Coli O157:H7 and Campylobacter. ATB was used to identify strains, mini VIDAS was used to detect the enterotoxin. [ Results] The overall positive rates on 150 pieces of detected samples on salmonella was 30.5%. LM 0.7%, O157 : H7 0.7%, while campylobacter was not found in 2005. In 2006 overall positive rates of Vibrio Parahemolyticus was 25.0%, Staphylococcus aureus was 20.0%, LM 18.3%, Salmonella 4.3%, O157:H7 and campylobacter were not found in about 140 samples. In 2007 overall positive rates of Staphylococcus aureus 20.0%, LM 17.9%, Vibrio Parahemolyticus 10.0%, Salmonella 3.6%, O157: H7and campylobacter were not found in about 83 samples. [Conclusions] Staphylococcus aureus, Listeria Monocytogenes (LM), Vibrio Parahemolyticus, Salmonella as foodborne pathogen are detected in 373 food samples in the years of 2005-2007, which indicates that these 4 kinds of pathogen could be the potential risk factors of the foodborne diseases in Nanjing area in futurtime, especially the high detected rate of LM, this alerts us that we should pay special attention to it.
