摘　　要：喷雾干燥技术应用比较广泛,近年来在果蔬粉加工中的应用研究较多。本文综述了喷雾干燥技术的发展状况、料液雾化机理、喷雾干燥理论研究和设计方法的最新进展及在果蔬粉中的应用及存在的主要问题,并对今后喷雾干燥技术及在果蔬粉加工中的应用的发展方向提出了建议。Much study had been focused on fruit and vegetable powder production by spray drying in recent years. The new progress in material liquid atomization mechanism, spraying dry theoretical research, design method ,fruit and vegetable powder production by spray drying were reviewed .The suggestions on the developing direction of application of spray drying in the fruit and vegetable powder were qiven.
