摘  要:选取18种氨基酸与牛乳复合培养嗜热链球菌,结果表明:谷氨酸、甘氨酸、丝氨酸、亮氨酸与牛乳复合时对嗜热链球菌促生长作用明显,活菌数分别为:3.80×109、2.60×109、2.50×109cfu/mL和1.80×109cfu/mL,对照为7.20×108cfu/mL;其余14种氨基酸促生长效果不明显。谷氨酸加量为10mg/L时促生长效果最好,凝乳时活菌数可达到4.80×109cfu/mL,并讨论了嗜热链球菌在谷氨酸与牛乳复合培养液中的生长规律。18 kinds of amino acid were selected to mix with milk respectively to constitute composite medium where Streptococcus thermophilus bacteria were cultured. The results manifested that glutamate, glycine, serine and leucine significantly promoted cell growth of Streptococcus thermophilus when mixed with milk, the viable counts of Streptococcus thermophilus got to 3.80×10^9 cfu/mL, 2.60×10^9 cfu/mL, 2.50×10^9 cfu/mL and 1.80×10^9 cfu/mL (Streptococcus thermophilus in antitheses sample was 7.20×10^8 cfu/mL). Other 14 kinds of amino acid did not promote the growth of ST ideally. With regard to glutamate which had ideal effect on cell growth of Streptococcus thermophilus, the best viable count was raised to 4.80×10^9 cfu/mL when its content was 10 mg/L. The growth pattern of Streptococcus thermophilus when cultured in the glutamate-milk composite medium was also discussed.
