摘　　要：该文详细介绍果糖基转移酶来源、性质及果糖基转移酶与低聚果糖生产,并分析果糖基转移酶和低聚果糖生产中存在问题。This text below mainly particularly introduces the source and character of this enzyme, including production of β-fructosyltransferase and fructo-oligosaccharide.
