摘  要:目的:筛选适于酶解法生产降血压肽的水产蛋白原料。方法:在分析15种水产品与水产品下脚料基本成分的基础上,以酶解法(酸性蛋白酶和碱性蛋白酶)酶解15种原料,测定不同酶解液的水解度、ACE体外抑制率和ACEIC50。结果:碱性蛋白酶对原料的水解度较大;15种原料的酶解液均表现出不同的ACE抑制效果,抑制率在19%~99%之间;以ACEIC50为评价指标,ACE抑制效果好的原料有鲫鱼、鲈鱼、带鱼脊骨和鲳鱼,ACE-IC50分别为11.68、12.96、11.26、11.18mg/mL(酸性蛋白酶酶解)。结论:综合考虑降血压肽的工业化生产要素和ACE抑制活性,选取价格低廉、原料预处理简单的带鱼脊骨作为ACE抑制肽生产的水产蛋白原料。Objective: The objective of this study was to screen suitable material for ACEIP producing. Method: Based on the analysis and comparison of components in 15 kinds of different aquatic products and its by-products, DH, ACE inhibitory rate and ACEIC50 of hydrolysates by two different enzymes: acidic protease and alcalase were assayed. Results: The results showed that DH of alcalase was higher than that of acidic protease. The hydrolysates of 15 materials by two enzymes inhibited ACE in different levels; inhibitory rates were from 19% to 99%. Among 15 kinds of materials, crucian carp, Japanese sea bass, ribbonfish backbone, and silvery pomfret showed better ACEIC50, the values were 11.68,12.96,11.26,11.18 mg/mL by acidic protease hydrolysis, respectively. Conclusion : As concerning of industrialization, ribbonfish backbone is the most suitable material for its cheap and easy pretreatment characteristics.
