摘  要:概述了米糠生物活性肽的发展状况。阐述了酶解米糠蛋白制备生物活性肽的国内外研究进展以及酶解工艺流程的主要步骤和技术关键。并指出了制备米糠生物活性肽存在的问题,以及未来的发展趋势。生物活性肽作为21世纪人类健康的新宠儿,有着广泛的发展前景。The development situation of rice bran bioaetive peptides was summarized. The progress on the preparation of bioactive peptides through hydrolyzing rice bran protein by enzyme at home and abroad, as well as the main steps and the key technologies in the process of hydrolysis by enzyme were described. The problems of the preparation of rice bran biological peptides and the trend in the future were indicated. Bioactive peptides as a new favourite for human health in the 21st century, has a broad development prospect.
