摘　　要：介绍了青稞、青稞特性、青稞主要成分、青稞在食品中的应用及青稞产品的加工利用现状;指出青稞食品加工利用中需要进一步研究和解决的问题。The main components, characteristics and application in food industry of hulless barley were introduced in this paper. Meanwhile, the question that need to be further studied and resolved in the food processing and utilization of hulless barley were pointed out.
