基 金:餐饮单位食品添加剂使用现状及监管对策的研究(A200901)
摘 要:目的:调查杭州市下城区餐饮业使用食品添加剂的现状,发现存在的主要问题并分析相关原因,并提出监督对策及建议,为完善管理政策提供背景情况和科学依据。方法:采用分层随机抽样的方法,对杭州市下城区156家餐饮业进行现场调查。结果:各餐饮单位食品添加剂总体知晓率由培训前的26.4%上升到培训后的59.5%;餐饮业食品添加剂总体索证率为37.8%,标识齐全率36.7%,管理制度完善率66.7%,固定场所存放率为74.1%,使用登记记录率35.2%,使用仪器准确称量率9.3%,使用汤匙和其他估计方式均为45.4%,抽检食品食品添加剂含量合格率60.2%;大型餐饮单位和集体食堂食品添加剂使用总体情况优于中小型餐饮单位。结论:餐饮业使用食品添加剂总体情况不容乐观,需要加强指导与监管,完善法规和建立餐饮业食品添加剂使用指南,更新检测技术。Objective:To investigate the current situation of the uses of food additives in catering trade of Xiacheng District,Hangzhou City,in order to discover the existent main problems and analyses the relative reasons,and put forward supervision countermeasures and suggestions,so as to provide scientific basis for prevention and control measures.Methods:Multistage stratification random samples were used in this study.A cross-sectional survey was carried out among 156 catering trades from Xiacheng District,Hangzhou City.Results:The staff′s whole rate of comprehension to food additives rise from 26.4% to 59.5% through training in every restaurant.The food additives total rate of request identification was 37.8%,completive signs 36.7%,perfect administrative system 66.7%,fixed place store74.1%,using register 35.2%,using equipment to weigh accurately 9.3%,using soup spoon and other estimate fashion all 45.4%,the food additives content qualified by random inspection 60.2%;the food additives using status of large restaurants and collectivity eatery are better than medium and small restaurants.Conclusion:The whole situation of the uses of food additives in catering trade isn′t optimistic,need to strengthen guidance and inspection,and perfect rules and establish food additive using guidance,renovate detection technology.
