摘 要:为防止维生素A醋酸酯氧化和扩大维生素A醋酸酯的应用范围,本文以明胶为壁材,采用喷雾干燥法对维生素A醋酸酯进行微胶囊化研究,以微胶囊包埋率为评价指标进行单因素及正交试验,并对产品进行了电镜观察,得出工艺条件为:芯材与壁材质量比为2∶1,乳化剂用量为2.0%,干物质含量为50%,在35-40MP压力下均质2-3次,喷雾干燥进口温度为180℃,出风口温度为80℃。微胶囊化后的维生素A醋酸酯产品不仅水溶性好,而且具有良好的流动性。经过28d、75%RH、40℃恒温恒湿加速实验,微胶囊中维生素A醋酸酯的保留率为93%,微胶囊表面具有良好的完整性和致密性,表明微胶囊化较好的增加了维生素A醋酸酯的稳定性。To improve the stability of vitamin A acetate and extend the scope of its applications,gelatin was used as wall material in vitamin A acetatemicrocapsules for vitamin A acetate were prepared by spray drying with gelatin as wall material.Single factor and orthogonal tests were performed to evaluate by encapsulation efficiency;and also the surface structure of the products was also observed with by using a scanning electron microscope(SEM).The optimal parameters were found as follows: the ratio of core material to wall material was 2 ∶1,the concentration of emulsifier was 2.0%,the dry solid of the emulsion was 50%,homogenization homogenized at 35-40MPa for 2-3 times,.tThe temperatures of inlet and outlet wind were 180℃ and 80℃,respectively.Vitamin A acetate microcapsules were with wellhad better water-solubility and a fairly good fluidity;and the surface of microcapsules was smooth and compact.The recovery rate of vitamin A acetate was 93.0% in microcapsules after 28 days in an accelerated stability test under 75%RH、40℃ conditions.
